Secondary Fermentation

For the next two weeks to two months, the wine will undergo secondary fermentation. This is the final stage in fermentation. After a few weeks, test the sugar again using the hydrometer. The specific gravity should be 1.00 (or less), indicating that fermentation is complete. At this point, rack the wine again into another carboy, and add one campden tablet per two gallons (optional).



  • Tip : Use the extra wine (set aside in the gallon jug) to fill the assure that the carboy is full. Excess air in the carboy can cause oxidation, and make the wine go bad.

Test the acid of the wine and adjust to desired level.
